How does the instructor get their <tags> autocompleting their closing </tags> using the workspace? What is the shortcut?

It does it automatically and as far as I know, there is no way to unable the autocompletion. Check it out:

If it's not completing automatically for you, try to save work and create another workspace. Restart your browser and see if it works. If doesn't, check if you have the latest version of your browser (I highly recommend to use Google Chrome).
