looks like place holder image website is currently being worked on. It keeps sending me to an alternate website. They arent set up the same way. if this image is going to be a picture of me then I would rather just put a picture of me instead. or if its going to be something I enjoy doing such as a hobby then I could add that. I am assuming I can give it the same numbers she is saying in the video?

Unfortunately, PlaceImg has shut down its services last month. You can indeed upload an image yourself if you want, as long as the aspect ratio is the same like it is in the video you shouldn't be experiencing any issues (same height and width).
Alternatively I have just added a couple of alternative services in the Teachers Notes of the video which you could use 🙂
You can use these alternatives in the same way as shown in the video, for example:
