Just set your document Resolution size to 300 ppi or output it in SVG for web. ;-)

For the IOS? Just double the original size. If you have 100X100 icon, so for retina it will be 200X200. This is why its good practice designing in vector graphics first place. If you are using photoshop so start with retina first and scale it down so you wont lose quality.
