What would be an official CSS Grid container size for a website?

I usually see when sites are built on Team Treehouse or Udemy or whatever online platform, they would use like minimum width and maximum width or 980 pxs or 1280 pxs and so on and I just get thrown off. No that we are head on with responsive layouts, if I were to build my first site and then build for customers going forward, what is a good rule of thumb site width? Would I span a column to 100% using CSS Grids? How many columns would I TYPICALLY use for a professional site? Im just confused on all of this. Can someone please shed some light on this. I would prefer a rule of thumb if possible. Thank you
