C# C# Streams and Data Processing Reading Data Breaking It Up Into Lines

Why break it into lines?

The output to the console when reading the file directly looks exactly the same as the output after adding the split and options. Is there some major difference in this that wasnt explained or is it just to show the hidden carriage return?
